“Le Pain Quotidien” is a part of group of companies “Nash Khleb Bakery Group” (rus. “Наш Хлеб”). It combines its own production complex and a chain of bakery cafes. The company’s own production has been awarded an international quality certificate HACCP.

RESPONSIBILITIES

The COO/ In charge of 46 cafes, 6 territorial managers, the staff of the department is more than 800 people.

CORE RESPONSIBILITY

Management of the main financial indicators of the production complex and the network of bakery cafes (FC, LC, LfL, PnL. Misc, EBITDA).

RESULTS

1. Financial Performance:

– EBIDTA 25%
– LC 15%
– COGS 28-29% – PnL 6-7%

2. Operating Activities:

– Reduced food cost by 2.5% by selling high-margin products, reaching 32%.
– Reduced the cost of purchasing products from 8% to 6.5%.
– Reduced the number of thefts by 50%, due to the introduction of a loyalty system for guests with the Marketing Department (introduced cashless payments through a mobile application).
– Reduced the shortage by 25% at the stage of acceptance of goods using a video monitoring system.
– Provided high service and quality of the bakery chain employees’ work – no more than 2 complaints per month.

3.Commercial Activities:

– Brought the sales figure of the cafe chain to 102-103%.
– Increased the sales of the “products to go” category to 8%.
– Brought 70% of the cafe to exceed the sales target.
– Increased the sale of drinks to 5% due to the introduction of an additional volume of “Grand”.
– Participated in the discount system optimizing project, as a result, a figure of 3.5% was achieved for the cafe chain (previously 7%).
– Developed and implemented a system for monitoring key performance indicators for real-time decision making.

4. Staff management:

– I manage the payroll budget – 16-18% of operating costs, with market values of 20-22%
